Fresh sushi rolls with your favorite fillings
Rinse sushi rice until water runs clear. Cook rice with water according to package instructions. Let cool to room temperature.
Mix rice vinegar, sugar, and salt in a small saucepan. Heat until sugar dissolves. Let cool and mix into cooked rice.
Slice fish into thin strips. Cut avocado and cucumber into thin strips. Keep all ingredients cold until ready to use.
Place nori on a bamboo mat. Spread rice evenly, leaving 1 inch at top. Add fillings in center. Roll tightly using the mat.
Use a sharp knife to cut rolls into 8 pieces. Serve with wasabi, pickled ginger, and soy sauce.
